We all know our favorite Italian restaurant, complete with favorite guilt-inducing Italian dish and, obviously, our favorite sweet ending to the meal. If your answer to the last part of that wasnt tiramisu,” GIRL BYE.
Simple, classic, and delicious, tiramisu is a beautiful dessert made up of layers of espresso-soaked lady finger cookies, mascarpone, cocoa, and love. Fun fact: You can make this shit yourself and it isnt even hard. Doubly fun fact: You can add alcohol and make it even more delicious we dont really know how thats possible, but it totes is.
– 6 egg yoks yes, you need to separate eggs so like look it up
– 1 cup sugar
– 1 cup mascarpone cheese
– 1 cups heavy whipping cream DO NOT GET DIET OR LIGHT OR WTF EVER
– 2 7-oz packages Italian lady finger cookies
– cup cold espresso, freshly brewed
– cup dark rum
– cup Kahlua yassss
– 2 tbsps cocoa
You need to have or create a double boiler, so gtf over it. Get a pot, put some water in it and let it boil, then put a heat proof bowl over top and add in your egg yolks and sugar. Side note the water should NOT be hitting the bottom of the bowl. Reduce the heat on the stove to low and cook for about 10 minutes stirring constantly. If you dont stir constantly, you will have a strange omelet. Remove from the heat and continue whipping yolks until they are thick and lemon-colored.
Add the mascarpone to the yolks and beat until combined. In a separate bowl, whip the heavy cream until it forms stiff peaks. Then, gently GENTLYYY fold the whipped cream into the yolk mixture and set aside.
Mix the espresso with the rum and Kahlua and dip the lady fingers in just enough to wet them, dont fucking soak them in it. Then, in a 9-inch square baking dish, arrange the lady fingers in the bottom and spoon half of the mascarpone/yolk/cream filling over top spreading over. Repeat the layering with the rest of your ingredients.
Refrigerate overnight and dust with tons of cocoa before serving. Yes, its a bit involved, but fucking tiramisu with booze is worth our time.
