We’re elbow deep into the holiday baking season and there’s only one way to avoid the sugar coma that’s inevitably on its way, and that’s with healthy recipes. We all need some seriously good-for-us recipes that’ll cancel out all those baked goods. Or at least put something nutritious in our bodies. (Hello, vegetables!)

In order to help everyone enjoy the rest of this sugary holiday season, we have a brightly flavored Tex-Mex breakfast bowl, a veggie-loaded baked enchilada casserole, brown Mexican rice and stuffed Hatch chile peppers. And when the mood for something sweet should strike but you don’t want to eat another cookie (yet) let us suggest naturally-sweet roasted squash sprinkled with cinnamon and a pat of butter.
